Spinnaker Gourmet Stage is a series of special gourmet dinners held at Valamar’s Spinnaker restaurant in the historic center of Poreč, bringing together chefs from Croatia and the region with the aim of showcasing the diverse culinary influences that shaped Istrian gastronomy. This restaurant, located on the Poreč Riva, continued to build its reputation as an exclusive culinary destination, where a passion for gastronomy met creativity and top-quality ingredients.
After earning a recommendation from the prestigious Michelin Guide last year, Spinnaker successfully retained that recognition this year as well.
On Thursday, September 11, 2025, starting at 7:30 PM, as part of the Tunalicious Festival, Spinnaker hosted a new edition of the Spinnaker Gourmet Stage, dedicated entirely to Adriatic tuna. On this occasion, Marina Gaši joined the Spinnaker kitchen team. Marina Gaši is one of the most awarded and prominent Croatian chefs, known for her signature approach to fish and seafood. In her restaurant Marina in Novigrad, she uses only ingredients from the Adriatic Sea, follows the principle of zero food waste, and works exclusively with what the sea and season have to offer. Her cuisine is stripped down, honest, and precise — every dish bears a personal touch, and sustainability and respect for nature are the foundations of her work.
Marina Gaši’s signature menu for this edition of the Spinnaker Gourmet Stage was accompanied by wines from the Tomac family, who had nurtured winemaking for over a century on the slopes of the Plešivica-Okić winegrowing region, with vineyards more than 80 years old. Tomac Winery is renowned for its exceptional sparkling wines, pioneering the introduction of the traditional method and amphora-aged sparkling wines, as well as for its organic and biodynamic production — attributes that have earned Plešivica the reputation of being the “Croatian Champagne.” Their wines added a unique aromatic dimension to the evening and highlighted the versatility of Adriatic tuna.
