Spinnaker Gourmet Stage is a series of special gourmet dinners at Valamar’s Spinnaker Restaurant located in the historic center of Poreč, at the seaside Riva. This restaurant offers a pleasant terrace and a completely renovated interior, as well as new tasting menus based on Istrian traditions and flavors, extracted using contemporary techniques.
During Tunalicious Festival, on Thursday, September 12, 2024, Spinnaker will host a new edition of Spinnaker Gourmet Stage, entirely dedicated to Adriatic tuna - a beloved ingredient known for its high quality even in Japan, where it is often consumed raw.
Chef Zdravko Tomšić, known as the pioneer of the Croatian fine-dining scene, an influential educator, and a restaurant consultant, will be a guest at this edition of the Spinnaker Gourmet Stage. The focus of the tasting menu that Tomšić will prepare for this occasion will be premium Adriatic tuna. His résumé includes leading the kitchen at the Kukuriku restaurant from 1998 to 2005, and from 2005 to 2015, he worked as the head chef at the Draga di Lovrana restaurant, during which time his work was recognized by Gault Millau Austria, Gambero Rosso, and others. Today, this master chef takes on the role of educator, and his mentorship has helped develop a multitude of top young chefs. As a consultant and educator, he focuses on Croatian national and traditional cuisine, sharing his knowledge with restaurants, event agencies, educational institutions, and wineries from Istria to Dubrovnik.
Tomšić’s signature menu for this edition of the Spinnaker Gourmet Stage will be accompanied by wine pairings from Kadum Winery. Ivan Kadum inherited his love for viticulture from his father, Darko, with whom he revived the family business after 100 years. Part of the Kadum Winery is located in a house in the village of Buići near Poreč, and their vineyard, spanning nine hectares of rich, deep terra rossa soil, is cultivated according to all the standards of organic production.
