Spinnaker Gourmet Stage is a series of special gourmet dinners at Valamar’s Spinnaker Restaurant located in the historic center of Poreč, at the seaside Riva. This restaurant offers a pleasant terrace and a completely renovated interior, as well as new tasting menus based on Istrian traditions and flavors, extracted using contemporary techniques.
During Tunalicious Festival, on Thursday, September 7, 2023, Spinnaker will host a new edition of Spinnaker Gourmet Stage, entirely dedicated to Adriatic tuna - a beloved ingredient known for its high quality even in Japan, where it is often consumed raw.
Chef Stiven Vunić from Konoba Zijavica in Mošćenička Draga, renowned for his culinary philosophy based on fish and seafood, will be the guest-star at this edition of Spinnaker Gourmet Stage. Growing up in a fishing family, Stiven’s cooking strives to preserve the ingredients coming from the sea and bring authentic, precise flavors to the table. He is a member of JRE Croatia, an association of top chefs and restaurant owners, and his talent has been recognized by Gault&Millau Croatia who awarded him the "Great Chef of Tomorrow" trophy.
Stiven’s signature menu for this edition of Spinnaker Gourmet Stage will be paired with Ipša wines. The Ipša family has vineyards based in prime locations of central Istria and produce their natural wines using longer maceration and aging in wooden barrels, while their sparkling wines are made using the traditional bottle fermentation method.
